Hey guys!! I loved making these mini muffins!! Somehow muffins just taste so much better when they're smaller!! Ever since I got mini muffin trays, I rarely ever make regular size muffins! These were tropical citrus-y muffins and they tasted amazing!! Let's get started!!
- 2 cups all-purpose flour
- 1 1/2 tsp baking powdre
- 1/2 tsp salt
- 1 stick (1/2 cup) butter, at room temperature
- 1 cup sugar
- 2 eggs
- 2 tsp pure vanilla extract
- ~1 tbsp orange zest
- 1/2 cup milk
- 1 cup shredded sweetened coconut
- 1 cup confectioners sugar
- 2 tsp orange juice
- 1/2 tsp orange zest
Preheat the oven to 375 and spray the muffin tray with nonstick spray.
Cream the sugar and butter in an electric mixer.
Add eggs one at a time.
Next add orange zest and vanilla extract.
Add half of the flour and all of the baking powder and salt, combine with half of the milk and then add the other cup of flour with the rest of the milk. Don't overmix.
Fold coconut into mixture and pour into muffin trays. I made about 36 mini muffins, and I filled the cups almost to the top. These muffins didn't rise that much so next time I'll probably fill them a little above the top because I like it when the muffin tops overflow a little. I sprinkled some coconut on the tops before popping them into the oven but that's optional!
The muffins bake for about 14 minutes until a toothpick comes out clean. (If you don't have a mini muffin tray and you make regular muffins, there will be less muffins made and the cook time will be more like 25 minutes)
I made the glaze by whisking the confectioners sugar and orange juice. I added some of my leftover orange zest for a little bit of color and texture.
After the muffins were done and cooled, I drizzled the glaze on top!! These definitely were more like dessert muffins than healthy muffins but they were so delicious!!
